Sodexo is seeking an Executive Chef for Lee University, a private, comprehensive university located in Cleveland, TN. Lee is emerging as a leader in higher education in the southeastern region and was ranked in 2011 in the "Top Tier" in the South by U.S. News & World report (Comprehensive Medium-Size Universities). Lee is also ranked by Princeton Review's "Best Colleges" and is now one of the 141 colleges named Best in the Southeast. Over the past two decades, Lee has become one of the largest Christ-centered private institutions in Tennessee and the largest in the Appalachian College Association.
The successful candidate will have previous Chef leadership experience, a strong food knowledge and an acute understanding of financials - including labor and food costing, ordering and inventory. High volume catering experience, creativity, excellent leadership and good client relations is a must. A Culinary Degree is preferred, but not required. Previous expeirence working in a college food service environment preferred, but not required.
Under the Sodexo contract we operate all retail (Chick fil-A, Subway, Einstein Bros Bagels, Dunkin Donuts and Jazzman's Cafe), resident dining and catering for the university. We also operate a large summer camps program with more than 11,000 guests visiting the campus in June and July.
Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
Sodexo will require a background check and may require a drug screen for this position.
