Description

Sodexo Campus Services is seeking an experienced Executive Chef 2 at the Fort Lewis College in Durango, CO . This position will be responsible for the culinary production for a large resident dining operation and 4 additional retail operations with one focusing on local -seasonal foods, dynamic catering and steady conference business. The campus offers lunch/dinner/late-night meals, multiple platforms, and has 900 students on meal plans. Relocation assistance is available for qualified candidates!

The Fort Lewis College campus is in a resort town in southwestern Colorado, situated at 6,872 feet atop a mesa overlooking the Animas River Valley and historic downtown Durango and boasts a student population of approximately 4000. The campus' distinctive architectural theme utilizes locally quarried sandstone to acknowledge the region's Native Puebloan building style and evoke the Four Corners' landscape and colors.

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.

Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
