Executive Chef
23795 - Sodexo has an opportunity available for an Executive Chef (II) at Lasell College , a medium size college in Newton MA with 1600 students. Sodexo offers food service in one resident dining hall with state of art cooking stations, 3 smaller retail locations, with 7 day operation. This is an ideal career opportunity with career growth potential for the true culinary professional. Ideal candidate has: a Culinary Degree/Trade School Certificate, a current Servsafe Certification, a high volume food production background, purchasing experience, the ability to analyze revenue streams and cost centers, experience with inventory management. Responsibilities include food production oversight for all resident dining, food retail venues, and upscale catering. Position will plan and cost out menus
keeping current with industry trends and diverse cuisines. A working knowledge of sustainable programs would be helpful in this position. Best qualified candidate possesses excellent leadership and communication skills and will be hands on during VIP functions where position will interface with the
client and customers on a regular basis. The successful candidate will oversee the culinary team, hourly and student employees. In this pivotal role, the Executive Chef leads focus groups to engage clientele in the customer service enhancement process. Position is involved with network groups, mentoring and other student programs. This is a year round position with a varied schedule that may include some weekend and holiday management coverage. Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
Sodexo will require a background check and may require a drug screen for this position.
