23786 - Sodexo is looking for a high energy Chef Manager for Lincoln Lutheran Village , a 120 Resident skilled nursing facility in Racine, Wisconsin . This position offers future career growth potential as the client looks to open a new and larger facility. Position interacts daily with the residents
and requires hands on involvement with food production and front of the house services. The ideal candidate has diverse food product knowledge, exceptional training skills, an effective communication style to work with all generations in the workplace, and some healthcare experience. Position works
diligently with other departments creating small but intimate caterings. Position responsibilities include inventory management, ordering, scheduling, payroll, recipe development, menu development, and on site employee training. The Chef oversees the HACCP and sanitation programs for regulatory compliance and all culinary production and service. Position reports to Operations Manager and General Manager. Schedule may vary and may include some weekend and holiday management coverage. Supervises cooks and oversees the preparation, portioning, garnishing, and storage of food. Estimates food consumption and purchases food. May assist in cooking and preparing food as necessary. Responsible for maintaining kitchen and storage facilities in sanitary condition. Responsible for cash management. Interacts with client/customers on a regular basis. This position is the leader for an account/unit chef/production group. This position is in smaller accounts/units where there is not a Chef or Food Production Manager. Reports to GM.
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 1 year
Basic Functional Experience - 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
Sodexo will require a background check and may require a drug screen for this position.
