23900 - Sodexo is seeking an Executive Chef (II) for Cedar Village Retirement Community in Mason, Ohio. Mason is the largest city in Warren County, which is near the southwest corner of Ohio. This is a 250+ Resident Kosher Continuing Care Retirement Community. Ideal candidate has a Culinary Degree / Trade School Certificate, Servsafe Certificate, Kosher Kitchen experience, an Executive Chef background in dining and catering for Senior Living. Position manages; food production for resident meals and catering, deli production and specials, HACCP protocols, sanitation, kitchen and service area safety, regulatory compliance, recipe development, inventory & purchasing, culinary training, food safety training, and exhibition cooking. Best qualified candidates have the ability to multi task and manage special project as well as the financial acumen to control costs using food and labor management systems. Position is hands on at times and previous experience in a hotel/ resort / country club or retirement/independent living community is ideal. A working knowledge of the Department of Health and regulatory guidelines is critical to the success in this position. The typical shift will run 10am - 7pm and may include some weekend and holiday management coverage. Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
Sodexo will require a background check and may require a drug screen for this position.
