Sodexo is seeking an Executive Chef 3 to lead the catering and retail operations for the Rose Hill Campus of Fordham University in the Bronx. Fordham University is a prestigious Jesuit University and the Rose Hill campus is not only the oldest and largest of the 10 colleges at Fordham University, but it is also a beautiful garden-adorned campus adjacent to the Bronx Zoo and the New York Botanical Garden.
The Executive Chef will be involved with and responsible for managing the food production for all catered events and for all retail locations on campus, properly managing food and labor costs and will possess a thorough working understanding of HACCP, all to exceed client xpectations. This Executive Chef will have oversight for all culinary activities related to catering along with multiple Sodexo and national retail brand outlets. The Executive Chef will manage approximately 40 union employees (both Sodexo) and will need to be available to work weekends as needed in order to accommodate the managing of large catered events. The best qualified candidate will possess excellent leadership and communication skills. It will be required that this position be hands-on to create and produce outstanding and high quality food and dining experiences. The ideal candidate will also have prior experience in designing innovative high end special event menus.

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in the largest accounts or in an account requiring a highly skilled Executive Chef. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 3 years
Basic Functional Experience - 4 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
Sodexo will require a background check and may require a drug screen for this position.
