Sodexo Universities is seeking a Dynamic Executive Chef 2 for Lee University located in Cleveland, TN! Lee University is a Private University, associated with the The Church of God. Lee University is 2 hours north of Atlanta, Ga, 1.5 hours south of Knoxville, TN and only 25 minutes for Chattanooga, TN. Nestled in the foothills of the Great Smokey Mountains, there are many outdoor activities to enjoy. The Deacon Jones Dining Hall was fully renovated in the summer of 2017 and is now a showcase account for Sodexo. The account consist of Resident Dining, Catering and 6 Retail Locations including, Chick Fil a, Jazzman's, Dunkin Donuts, Einstein's Bagel Bros., Subway, 2 Simply To Go locations, and Sandella's.
The Executive Chef will be responsible for managing and directing the day to day resident dining, catering and summer conferences culinary operations to ensure quality production and delivery of product and service, while overseeing a staff of 50 plus kitchen, service and frontline employees. The Deacon Jones Dining Room offers unique platforms that cater to customers preferred tastes and serving over 16,000 meals per week.
He/she will be a hands on Executive Chef who is responsible for all tasks associated with, and the full implementation and accountability for Sodexo purchasing, food production, food safety and operational standards and requirements. This position involves catering for high end events as well as off-site catering.
The ideal candidate will have demonstrated ability to drive the business through outstanding customer service and food quality. Being a self-starter and possessing exceptional leadership skills, along with strong interpersonal skills are essential in order to motivate and lead a team, as well as interact with customers and all levels of management. Must exhibit strong financial acumen to ensure cost effective operations to include labor management, food costs, and inventory control.
Previous experience in a high volume college dining service environment required. Previous experience managing catering operations - planning, production and plating also required. Bilingual in the Spanish language a plus.
The Executive Chef II may assume GM's responsibilities and authority in his/her absence. Assists in maintenance of payroll records. Assists in supporting the financial/HR functions. Maintains customer satisfaction and good public relations
