Sodexo is seeking an Executive Chef (II) for Texoma Medical Center in Denison, TX; 75 miles north of Dallas. This is a 340 bed acute care hospital providing quality care and delivering innovative services to residents in North Texas and Southern Oklahoma for more than a half-century. Position oversees; training of the food production team, developing culinary programs for “At Your Request” Patient Dining, Café Retail sales, and Catered events. Duties include; monitors for food safety and sanitation, managing the menu & recipe cycles with a focus on health and wellness options, assisting in high end catered events, providing strategic analysis and solutions to product cost and food productions systems, enthusiastic leadership and exceptional organizational skills for an employee and customer centric environment. Your strong culinary ability, ability to manage multiple priorities, and excellent leadership is critical for this position with the primary focus on driving food quality and culinary innovation in all aspects of production and service with attention to health and wellness! Catering for multiple Clients is very high profile and expectations are high during these events. Candidates will need to conduct a tasting with the administrative team before hire.
Ideal Candidate Skills, Certification:
Culinary Degree / Trade School Certificate and Servsafe Certified
Prior food service management experience in healthcare environment
Ability to manage inventory; budget of 1.5 million in financial volume
HR skills to train & develop 22 employees & production team
Computer skills; financial, food & labor management systems
Detailed knowledge of HACCP and Department of Health Regulations
Experience with healthcare food production, recipes and quality standards
Menu Planning for Patient, Food Retail, and Catering
Exp; FMS, SMG, Gold Check and Ecosure/SoSafe inspections is a plus!
Your ability to communicate in Spanish will assist in managing this workforce
Typical schedule; 6am - 4 pm with _shared weekends / holidays
