Culinary Trainer/Chef

Indigenous Education is the core of our work. Indigenous Education is thousands of years of ancestral, regional knowledge that passed down countless generations, giving us the blueprint for a healthy, sustainable, community-based lifestyle. Realizing the loss of our Indigenous Education through boarding and residential school assimilation efforts, on top of the current euro-centric curriculum that is taught in schools today, it is imperative as indigenous peoples that we define and share our own knowledge base. We need to revive ancestral knowledge in danger of being lost, re-imagine a modern indigenous food system based on this ancestral knowledge, and restore health and wealth to Native communities. Research and development in working with and understanding myriad Native ingredients will be a key focus of our work.

North American Traditional Indigenous Food Systems (NATIFS) is seeking a Culinary Trainer. Currently, our production includes preparing 600-800 community relief meals per day, and will expand to possibly include things such as packaged foods for public purchase and other educational initiatives as we grow.

Responsibilities

  • Work with Culinary Director and Executive Chef on menu and recipe development
  • Work with Education Director and Executive Chef on developing research and development with the purpose of creating more curriculum and educational resources
  • Provide training and ongoing education for kitchen team
  • Work with Executive Chef to evaluate progress and facilitate achievement for kitchen team
  • Assist Executive Chef in managing food costing
  • Supervise kitchen team
  • Ensure that the kitchen and surrounding areas are sanitized and clean in accordance with company standards and health code regulations
  • Stay current on local, state and federal food and sanitation requirements
  • Identify new culinary techniques and presentations
  • Assist kitchen team with food prep and organization

We are looking for

  • 2+ years experience in a culinary training or chef instructor position
  • 2+ years experience in a management position
  • Demonstrated knowledge of current restaurant industry trends
  • Must possess culinary creativity
  • Must have an interest or experience in working with Indigenous foods and expanding skills and knowledge in this area
  • Proven experience providing direction and supervision to kitchen staff
  • Current ServSafe certification or certified within 90 days of employment (Instructor status preferred)
  • Knowledge of basic Spanish is helpful, fluent is ideal

Compensation

  • $50,000$55,000 annual salary depending on experience

Requisitos

  • Ms de 2 aos de experiencia en formacin culinaria o un puesto como instructor de chefs
  • Ms de 2 aos de experiencia en un puesto directivo/gerencial (manager)
  • Conocimiento demostrado sobre las tendencias actuales de la industria de restaurantes
  • Debe poseer creatividad culinaria
  • Debe tener inters o experiencia en trabajo con alimentos indgenas e inters en expandir sus habilidades y conocimientos en esta rea.
  • Experiencia comprobada en la direccin y supervisin de personal de cocina.
  • Certificacin actual de ServSafe o deber obtener la certificacin dentro de los 90 das posteriores al inicio del empleo (se prefiere el estado de Instructor)
  • Conocimiento bsico de espaol es til, espaol fluido es ideal

Compensacin

  • $ 50,000$ 55,000 de salario anual dependiendo de su experiencia
